Baia Pasta, an organic, artisan pasta made in Oakland, is now available at Enzo’s Table in Clovis.

The upscale fruit stand at 1959 N Willow Ave. is the only store in the area to carry the premium pasta. Vincent Ricchiuti of Enzo’s Table says the pasta is exceptional and is made from top-shelf ingredients by founders Renato Sardo and Dario Barbone.

The pasta is made using organic flour sourced from Montana, Colorado and Washington. The small company also collaborates with California farmers to grow durum, a high-protein wheat, and spelt, an ancient grain that is a hardier version of wheat.

What makes Baia different is that it’s produced in small batches and extruded through brass dies that give the pasta a rough surface to better absorb sauces.

Enzo’s carries four of the company’s pastas. Each 16-ounce box sells for $6.99.

Ricchiuti says he was drawn by the package’s design and the use of quality ingredients. Once he tasted it, he was sold and wanted it for the store. After a few conversations, the pasta makers agreed to have Enzo become the exclusive seller of Baia in the Fresno/Clovis area.

“This is one of the few domestically made pastas that tastes as good as if you made it at home,” Ricchiuti says. “And we are very excited to have it available for our customers.”
