Toledo’s founder honored. His path from teen immigrant to Fresno restaurateur

Sam Toledo, founder of Toledo’s Mexican Restaurants, is a heavy hitter on the Fresno restaurant scene.

He and his family have founded multiple popular restaurants over the years. And quietly, behind the scenes, he’s lent expertise and recipes to numerous other restaurateurs who have opened their own Mexican restaurants around town.

It was recently announced that Toledo will receive the Lifetime Achievement Award from the California Restaurant Association’s Fresno Chapter March 24.

Toledo’s name is all over the Fresno Bee archives. Here are three stories that show the depth of his impact on the Fresno restaurant scene.

1. Beginnings

Story: This favorite Mexican spot has quietly shaped the Fresno restaurant scene

Sam and wife Martha and their family were chosen as one of The Bee’s “Restaurant Royalty” in a 2024 series. The story recounts 14-year-old Sam trekking from Mexico to the United States alone, with no family here to meet him. He made friends with the tough guys at a labor camp to survive, before getting a job as a dishwasher at a Mexican restaurant.

From there, he climbed his way up the ladder, and the story details how the company grew from one restaurant to several.

2. Saying farewell

Story: Fresno said goodbye to a favorite restaurant patio. Now the building is being torn down

The first Toledo’s Mexican Restaurant was born in 1991 in the unique building on Blackstone Avenue near the U.S. Post Office in Pinedale. It had an enclosed patio beloved by Fresnans with full-size trees growing through the roof.

But the aging building was torn down in 2019. You can watch it get demolished and hear Sam Toledo share his heartbreak about it the video about it.

3. Rebirth

Story: Toledo’s new flagship restaurant in Fresno is finally open. Take a tour inside

After the original location was torn down, the restaurant was supposed to reopen in a new location on Cedar Avenue, north of Nees Avenue. But with unpredicted COVID-19 slowdowns, it took five years — and a lot of creative banners with words such as “Opening soon ... ish.”

In spring of 2025, it finally opened. The story and video take readers on a tour of the restaurant and kitchen, including its big new bar and giant glass art pieces hanging from the ceiling.
