Something new is coming to Clovis this summer: EggBred.

It’s a “craft breakfast sandwich” restaurant that has franchises throughout California, Florida and a few other states. It was founded by Albert Shim, a chef who appeared on “Chopped,” and other TV shows on The Travel Channel and ABC.

EggBred – a play on the words “egg” and “bread” – is taking over the former Hungry Bear Cookies spot at 1127 N. Willow Ave., near Nees Avenue and Trader Joe’s.

The restaurant is aiming to open in about three months, said franchisee Varinder Singh. Work renovating the space is expected to start in May.

“The space will feature a modern, fast-casual breakfast concept with indoor seating and a strong focus on quality, speed, and consistency,” he said in an email. “We’re aiming to bring something fresh and high-energy to the local breakfast scene.”

The menu

EggBred’s menu includes breakfast sandwiches, breakfast burritos, lunch sandwiches (including a cheeseburger with an egg on it), avocado toast, eggs Benedict and breakfast poutine.

The breakfast sandwiches are served on fluffy milk buns. They include Scramble Me Softly, made with soft-scrambled eggs, chives, caramelized onions, sharp cheddar and a smoked paprika spread.

Meat options include chorizo, bacon, ribeye asada, ham and the meatless impossible sausage.

It also serves cold-pressed juices.

Shim started the first EggBred in La Habra in Southern California, after running several food trucks.

Many of the restaurants have an upbeat, modern vibe with neon signs on the walls.

The company has 29 restaurants either open or listed as “coming soon” on its website. A large portion of them are in the Los Angeles area.
