Ice cream that’s instantly frozen in front of you using liquid nitrogen at -321 degrees Fahrenheit is coming to Clovis.

Creamistry Clovis will open sometime later this month – no date has been set yet – in the Clovis Commons shopping center that is home to Target at Herndon and Willow avenues.

Flash freezing the ice cream creates quite the spectacle in this video, with clouds of liquid nitrogen billowing out of the machinery.

The method is supposed to make a richer, smoother, creamier ice cream.

At Creamistry (like chemistry, get it?) customers pick from one of four bases for their ice cream: Regular, organic, sorbet or coconut milk.

They then pick from more than 50 flavors and 50 mix-ins. The ice cream is flash frozen in the mixing bowl and toppings are added.

The Southern California-based Creamistry has about 30 shops nationwide.
