They go by many names: Rocky Mountain oysters, Montana Tendergroin, swinging beef, calf fries.

Yes, we’re talking about bull testicles. And yes, people eat them.

Definitely a novelty dish, they’re now a regular on the menu at Guri’s GrubHouse at 1713 E. Shaw Ave.

The “oysters” are about the size of a mango each and come from farms in Paso Robles. Chef Megan Beck soaks them in a salt and red wine solution, slices them thinly, breads them in blue corn batter and deep fries them. They’re served as an appetizer with housemade ranch.

“They almost look like chips,” Beck says.

The staff at Guri’s is having fun with the dish, says Guri’s owner Michael Jew.

Because of the blue corn batter “she actually wanted call them atomic blue balls,” he says. “We figured just letting people know what they are was the better way.”

The Rocky Mountain oysters cost $4.99. Every Monday diners who buy a drink from the bar get a free plate of Rocky Mountain oysters.

Perhaps the most amusing part of the new dish has been the servers’ interactions with customers who don’t understand what the dish is, Jew says.

Diners “see the word oysters and they’re like, ‘Oh, I love oysters, let’s get those,’” Jew says. “They have to tastefully explain what they are to the customers.”

As for how they taste, Jew says: “Kinda like chicken.”
