Step aside, Starbucks. There’s a new unicorn in town. And it’s cheesy

What do unicorns and Mexican food have in common? Probably not much, unless you have eaten recently from El Premio Mayor’s food truck.

The Fresno owners are hoping to tap into the public’s obsession over unicorn colors. You know, those pastels that are showing up everywhere from grandma’s new hairdo to a Starbucks frappuchino.

And now, the Unicorn Quesadilla.

Bianca Loza, whose family runs the award-winning truck, said they got the idea for the colorful quesadilla after talking about the wild popularity of Starbucks’ Unicorn Frappuchino, which was released for a limited time and sold out quickly.

“We were seeing unicorn colors in drinks, grilled cheese, even tamales,” Loza said. “And we thought, ‘We could do that.’ Besides, I love those colors.”

With a little tinkering with food coloring and white cheddar cheese, they created the Unicorn Quesadilla.

“It melted beautifully and when you slice it and pull it apart it looks really cool,” Loza said. “It makes a great Instagram picture.”

El Premio Mayor, winners of last year’s Taco Truck Throwdown , will offer the special quesadilla only from the truck and not at their restaurant on Maroa Avenue. Follow them on Instagram and Facebook for updates on where the truck will be parked.
