Harlem Wing & Waffle in The Shops at River Park opened recently, combining a Southern favorite with Jamaican flavors.
A typical meal at the restaurant includes chicken with a Jamaican spice rub, 3-inch round Belgian waffles, carrot and celery sticks and dipping sauces. Customers can also get onion rings or waffle fries instead of waffles.
Owner Camalah Kopacz grew up in Jamaica and owned a restaurant there before moving to Fresno. She recently finished the Clovis Institute of Technology's culinary program.
Harlem Wing & Waffle was inspired by the original restaurant of the same name in New York, owned by Kopacz's husband's son-in-law.
The restaurant, which opened Dec. 15, employs 18 people.
It joins other wing and waffle restaurants, including Stuff Waffle in the Tower District and Come and Get It! Chicken & Waffles downtown.
