Easy weeknight meal: Caprese pizza

A delicious weeknight meal with little prepping involved.

Are you looking for a delicious, hearty and simple weeknight meal? Caprese pizza is the answer.

 

I used a store-bought crust since it was a busy weeknight and we had soccer and dance all day. Of course, you can make your own if you’d like...

First, drizzle olive oil all over the store-bought crust and spread pizza sauce. Next, put down about 1/4-pound of fresh mozzarella (sliced), one sliced tomato, and a handful of basil. Use salt and pepper to taste. Bake for about 10 to 12 minutes at 425 degrees.

Seriously. So. Good.

Costco has 2-pound packs of fresh mozzarella for cheap  around $7, I think.
