Healthy eating can be as simple or complex as your family prefers. Each week Family Meals Matter tends to feature simple, family-friendly recipes that can be prepared quickly to suit most family's busy schedules. However, healthy eating also can be creative.
Introducing children early to a wide range of foods promotes adventuresome eating, and National Nutrition Month is a great time to start. This week we've combed through our recipe collection to bring together a Five Food Group Feast with interesting preparation methods, flavor combinations and ingredients to "stretch" your family's palate.
Enjoy a healthy feast with all the food groups when you prepare Rosemary Oven Fried Chicken, Orzo with Spinach and Feta Cheese and Roasted Bananas with Chocolate Yogurt Cream. Other recipes to explore all week long include Arugula Salad with Grapes, Fennel, Gorgonzola and Pecans, Oven-Baked Cassoulet, Udon Noodles with Broccoli and Peppers, and Grilled Brie and Pear Quesadillas.
If any of these recipes sound too adventuresome for very young eaters, try serving ingredients separately or swapping ingredients with more familiar items. For instance, serve kids quesadillas with pears on the side or swap snow peas for broccoli in the udon dish. Remember, it's the adult's job to prepare balanced meals and the child's job to decide what and how much to eat.
